Stuffed Kulchas



 

I have been dreaming of preparing this amazing dish since many days. Never attempted, thinking it is high in calories as we add cheese into it. But, anyways, once in a while it is fine na!! It started from a tempting post in CAL (Chef at Large), by Reem Khan. She had the pictorial explanation of this recipe, which impressed me a lot.
Today I am going to show you all this awesome recipe, for which I have added my own twist. The stuffing consists of onions, spring onions, chillies and cheese. You can even add mashed potatoes, bell peppers, any vegetables or meat according to your preference. Adding cheese gives an excellent taste to this dish.

Ingredients

For the dough

  • Maida - 1 cup
  • Whole wheat flour - 1 cup
  • Milk - 1/4 cup
  • Water - 1/2 cup
  • Yeast - 1 tsp
  • Sugar - 1 tsp
  • Salt - 1 tsp
  • Yoghurt - 1 1/2 tsp

For the filling

  • Cheese - 1/2 cup (Shredded)
  • Onion - 1, finely chopped
  • Spring onions - few, finely chopped
  • Green chillies- 2 or 3, finely chopped
  • Coriander leaves -  1/2 cup, finely chopped
  • Salt - to taste
  • Pepper - 2 tsp, freshly crushed coarsely

Other Ingredients

  • Butter - to brush on kulchas
  • Black and white sesame seeds - few
  • Coriander leaves - few
  • Spring onion greens - few
  • Garlic - 5 pods, finely chopped


Method

For the dough

  • In a bowl, combine together, maida, wheat flour and salt. Mix well
  • Combine milk and water in a vessel and heat till it is just warm. Do not heat it too much.
  • Mix yeast and sugar in the water and let it sit aside untouched for 5 to 10 minutes, until it becomes frothy.
  • To the flour mixture, slowly add the yeast mixture. Knead it thoroughly up to 10 minutes, until the dough stops sticking to your hand.
  • Spread some butter all over the dough. Cover it using a damp cloth and keep aside. Let it rest for a couple of hours.
  • The dough would have become double the size by then, if you have done everything right.
  • Punch out the air pockets in the dough and divide them in to 3 or 4 equal portions.

For the filling

  • Combine all the ingredients under "For the filling" heading in the ingredients list. Mix thoroughly and keep it ready

How to Proceed?

  • Preheat the oven @200 deg C.
  • Take one portion of the dough roll it between your palm, flatten it and stretch it a little using your fingers. Hold it, so that it becomes the shape of a cup.
  • Place the filling in the cup and seal all the sides. Roll it in the flour
  • Flatten it using your rolling pin. Do not apply pressure on them. Make sure the filling doesn't come out.
  • Repeat the same for all. Slightly brush some butter on both sides of the kulchas
  • Sprinkle some black and white sesame seeds, spring onions, coriander leaves and garlic, over each kulchas. Press them gently, so that it will stick on the dough. 
  • Place them in the preheated oven. Let it cook for 10 - 15 minutes, until you see the top part is golden brown.
  • Take out of the oven and spread some butter over it, when it is still hot.
  • Serve hot with any sidedish of your choice. I served it with Rajma Masala.

Pizza Dosa



Hiiii everybody!!!

Pizza Dosa!! The name itself sounds very interesting, right?? And I am sure kids will love this. If your kids are not fond of any veggies, but if they love pizzas, just try this for them. They will surely come back for this healthy, crispy and tasty dosa again.

Here, I have my own version of tomato chutney to apply on the base. If you feel it is more spicy for kids, you can reduce the red chillies used for this preparation. Not only kids will enjoy this, every 1 will love this flavorful dosa.


Ingredients

  • Dosa Batter - 1 ladle full 
  • Oil / Butter - 1 tsp
  • Carrot - 1 small, grated
  • Onion - 1/2, sliced
  • Capsicum - 1/4, thinly cut lengthwise
  • Tomato - 1/4 , thinly cut lengthwise
  • Grated processed cheese - 1 tblspn
  • Salt - 1/2 tsp
  • Pepper - 1 tsp
  • Coriander leaves - Few, finely chopped

For Tomato chutney 

Also called pizza sauce is a preparation using onion, tomato and garlic. I have slightly indiansed it by adding red chillies to enhance the spice level (as my hubby likes this very much). You can add or omit it according to your preference. This is how you make a simple pizza sauce / tomato chutney for this pizza dosa. You need ;

  • Onion - 1, roughly chopped (preferably red onions)
  • Tomato - 2, roughly chopped
  • Garlic - 8 cloves
  • Red chillies - 5 (or according to your spice preference)
  • Salt -   to taste
  • Tomato sauce - 2 tsp
  • Oil - 1 tsp

Method

  • Heat oil in a pan and add garlic, red chillies and onion. Season them with salt and cook until onions become transparent. 
  • Add the tomatoes and cook till tomatoes are mushy. Switch off the heat and allow it to cool
  • Blend it to a smooth paste adding little water. Transfer to a bowl and mix tomato ketch up. Your pizza sauce is now ready.

Method to prepare dosa

  • Heat your tawa and grease it with little oil. Change the heat to medium and spread a ladle full of dosa batter on the tawa. Spread it to a thick dosa. You can even spread it thin in order to get a crispy dosa base. But should consider the risk of getting burnt. Always keep the heat low in that case. Smear some oil to the dosa. Cover and cook for few seconds.

  • Change the heat from medium to low and spread a spoon full of pizza sauce / tomato chutney all over the dosa. 

  • Now add all the veggies and coriander leaves (Tomato, onion, capsicum, carrot, sweet corn, etc. Any veggies of your choice)
 














  • Cover and cook it for another 2 - 3 minutes.















  • Sprinkle some salt and pepper on top
  • Finally, add some grated cheese. Cover again and cook for 2 minutes or until the cheese is melted.
















  • Gently remove the dosa using a spatula to a serving plate.















  • Cut your pizza dosa in to pies, using a knife or pizza cutter and serve (or serve as it is ;) )
