Potato Masala
Ingredients
- Potato - 3, boiled and peeled
- Onion - 1 medium sized, chopped
- Tomato- 1, medium size, chopped
- Green chillies - 2, slit
- Oil - 2 tsp
- Asafoetida - 1/4 tsp
- Mustard seeds - 1/2 tsp
- Cumin seeds - 1 tsp (Optional)
- Urad dal - 1 tsp
- Red Chillies - 2, broken
- Curry leaves - 1 spring
- Ginger paste - 1 tsp
- Garlic- 2 cloves, minced
- Salt, to taste
- Turmeric powder - 1/2 tsp
- Coriander leaves - 1/2 cup
Method
- Mash the potatoes well, but have some chunks of it. Do not mash it too much and make a potato paste. You must get some potato bites in the masala
- In a pan, heat oil and crackle mustard seeds and cumin seeds. Add asafoetida. Add urad dal and fry till the colour is changed to golden brown.
- Add broken red chillies and curry leaves and fry for 10 seconds and then add the green chillies, ginger and garlic. Adding ginger paste and minced garlic will give a nice flavor.
- Now, add the Onions and fry until it is transparent. Add turmeric powder. Sprinkle some salt to ease the job.
- Add the tomatoes and cook till they are mushy. Keep stirring occasionally to avoid any burns.
- Add a tblspn of water and potatoes in to this. Mix well until everything is combined.
- Check the seasoning and adjust accordingly. Turn off the heat.
- Mix some coriander leaves. Transfer in to a serving dish and garnish again with coriander leaves.
Notes
- I have shown you the recipe for masala which is really thick, apt for masala dosas. If you want it little watery, add more water before adding the potatoes. You can adjust the consistency even after adding the potatoes.
